Sorry for being M.I.A. I have been busy working - but, alas! I am back and this recipe has been a favourite of mine lately; As quick and easy as this post!
Ingredients:
500g Raw, peeled king prawns
400g Orzo
1 small brown onion
2 large garlic cloves
1/2 tub full fat soft cream cheese
1/2 lemon
1 tsp olive oil
40g unsalted butter
2 tsp dried rosemary
c.1 tsp each (& to taste) salt and pepper
500g mushrooms
125g asparagus tips
400g sweetheart cabbage
1 small tree of broccoli
1 vegetable stock cube
500 ml water
1 glass Prosecco/ wine
1 handful fresh basil leaves
Method:
In a cold pan add oil and butter and finely diced onion and garlic, bring heat right up and cook till translucent.
Bring pan off heat and down to med. heat.
Add in chopped mushrooms, sprinkle of salt and pepper and rosemary as well as a knob of more butter.
Stir and leave to cook until soft and wilted and umami.
Add in rest of veg - asparagus tips, chopped broccoli, sweetheart cabbage (all chopped to own size preference)
Stir and let cook.
Add in orzo and stir.
Add raw prawns.
After time, add in boiling water and 1 veg stock cube.
Eventually bring up to boil high heat.
Add 1/2 small, single serve glass white wine/ Prosecco (I had this and no wine-it works just as well)
Add juice of half a lemon and 1/2 lemon’s zest.
Black pepper and fresh basil leaves & stir
Add in 1/2 tub cream cheese and stir

Serve with a drizzle of good olive oil and black pepper.
